Glen’s journey started as a trainee at the former Opal Lounge while studying part-time. Though not a sweets lover, he fell deeply for pastry’s creative magic, aiming straight for La Colombe. By 21, he led their pastry kitchen, crafting innovative desserts that elevated the world-famous spot. In 2012, he earned the ‘Rising Star Award’ at Pastry Chef of the Year. That’s when Foxcroft sparked—a name drawn from family heritage, perfectly suiting Constantia’s legacy and its sophisticated crowd.
Tucked into the serene High Constantia Centre, Foxcroft champions top-tier ingredients. Glen sharpened his craft with France’s elite pastry masters, mastering the ‘art of butter’ for exquisite patisserie. Menus dazzle at lunch and dinner: champagne-poached oysters, confit pork belly, limited daily slow roasts, and a luxurious 7-day dry-aged duck breast.
